    Prepare the Filling

    In a skillet over medium heat, melt 1 tablespoon of butter. Add the sliced andouille sausage and cook until browned. Add the diced onion and tomato, and cook until the onion is translucent. Finally, add the shrimp and cook until they turn pink, about 3-4 minutes. Season with salt and black pepper. Remove from heat and set aside.

    Make the Omelet

    In a bowl, whisk together the eggs, salt, and black pepper. In a non-stick skillet, heat the remaining tablespoon of butter over medium-low heat. Pour in the egg mixture and let it cook undisturbed until the edges start to set.

    Combine and Serve

    Once the eggs are mostly set, add the shrimp and sausage filling to one half of the omelet. Fold the other half over the filling and cook for another minute. Slide the omelet onto a plate and serve hot with creamy grits, hollandaise sauce, and country toast.
