    Prepare the Brisket

    Rub the beef brisket with salt, black pepper, smoked paprika, and garlic powder. Let it sit at room temperature for about 1 hour.

    Smoke the Brisket

    Preheat your smoker to 225°F (107°C). Place the brisket in the smoker and smoke for approximately 6-8 hours, or until the internal temperature reaches 195°F to 205°F (90°C to 96°C).

    Caramelize the Onions

    While the brisket is smoking, slice the onions. In a skillet, melt the butter over medium heat. Add the sliced onions and cook until they are golden brown and caramelized, about 20-25 minutes.

    Prepare Horseradish Cream

    In a bowl, mix together the horseradish sauce and sour cream until well combined. Set aside in the refrigerator until ready to serve.

    Rest and Slice the Brisket

    Once the brisket is done smoking, remove it from the smoker and let it rest for at least 30 minutes before slicing against the grain.

    Serve slices of brisket topped with caramelized onions and a dollop of horseradish cream on the side.
