Preparation and Cooking

    Prepare the Brisket

    Preheat your smoker to 225°F (107°C). Rub the brisket generously with salt, black pepper, garlic powder, and paprika. Let it sit at room temperature for about 30 minutes.

    Smoke the Brisket

    Place the seasoned brisket in the smoker and smoke for about 12 hours, or until the internal temperature reaches 195°F (90°C). Ensure to maintain the smoker temperature throughout the cooking process.

    Caramelize the Onions

    While the brisket is smoking, slice the onions thinly. In a skillet, heat the olive oil over medium heat. Add the onions and a pinch of salt, and cook until caramelized, stirring occasionally, about 20-25 minutes.

    Assemble the Rolls

    Once the brisket is done, remove it from the smoker and let it rest for 30 minutes before slicing. Slice the French rolls in half, spread a layer of BBQ sauce on the bottom, add sliced brisket, top with caramelized onions, and a dollop of horseradish cream. Cover with the top half of the roll.
