    In a large pot, melt the butter over medium heat. Add the sliced onions and cook, stirring frequently, until they are caramelized and golden brown, about 25-30 minutes.

    Stir in the minced garlic and cook for an additional minute. Pour in the white wine to deglaze the pot, scraping up any browned bits from the bottom.

    Add the beef broth, thyme, bay leaf, salt, and black pepper to the pot. Bring the soup to a boil, then reduce the heat and let it simmer for 20 minutes.

    Preheat the oven to 350°F (175°C). Remove the bay leaf from the soup and taste for seasoning, adjusting salt and pepper as needed.
