    Prepare the Herb Cream Cheese

    In a bowl, mix the cream cheese with the chopped fresh herbs. Set aside.

    Caramelize the Onion

    Slice the onion thinly. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the onions and a pinch of salt, cooking until golden brown and caramelized, about 10-15 minutes. Stir occasionally.

    Cook the Bacon

    In the same skillet, add the bacon slices and cook until crispy. Remove from the skillet and drain on paper towels.

    Cook the Eggs

    In the same skillet, crack the eggs and cook to your desired doneness (sunny-side up, over-easy, etc.). Season with salt and pepper.

    Cook the Breakfast Potatoes

    Dice the potatoes and boil them in salted water until tender, about 10-12 minutes. Drain and toss with remaining olive oil, salt, and pepper. Optionally, sauté in a skillet until crispy.

    Toast the bagels and spread the herb cream cheese on both halves. Layer with caramelized onions, bacon, shaved pecan ham, gouda cheese, and the fried egg on top. Close the sandwich.
