Prepare the Fries

    Cut the Potatoes

    Wash the Russet potatoes thoroughly. Cut them into thin strips, approximately 1/4 inch thick, to make fries.

    Soak the Potatoes

    Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes. This helps remove excess starch and makes the fries crispier.

    Dry the Potatoes

    After soaking, drain the potatoes and pat them dry with a clean kitchen towel to remove excess moisture.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the correct temperature.

    Fry the Potatoes

    Carefully add a batch of the dried potato strips to the hot oil. Do not overcrowd the pot. Fry for about 4-5 minutes or until they turn golden brown and crispy.

    Drain and Season

    Remove the fries from the oil using a slotted spoon and drain them on paper towels. Immediately sprinkle with salt and black pepper to taste. Repeat with remaining potatoes.

    Add Toppings

    Once all fries are cooked and seasoned, place them on a serving platter or individual plates. Top generously with shredded cheddar cheese, crumbled bacon, and chopped green onions.

    Serve with Sour Cream

    Optionally, serve with sour cream on the side for dipping, if desired.
