Preparing the Potatoes

    Boil the Potatoes

    Place the Russet potatoes in a large pot, cover with water, and add salt. Bring to a boil and cook for about 15-20 minutes, or until the potatoes are tender when pierced with a fork.

    Once cooked, drain the potatoes and let them cool slightly until they are safe to handle.

    Scoop Out the Inside

    Cut each potato in half lengthwise and scoop out the insides, leaving a small wall of potato around the edges to form a shell for the filling.

Making the Filling

    Mix Filling Ingredients

    In a bowl, combine the scooped potato flesh, cheddar cheese, diced jalapeños, cream cheese, garlic powder, and black pepper. Mix until well combined and creamy.

Assembling and Baking

    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Fill Potato Shells

    Carefully spoon the filling into each potato shell, packing it slightly to ensure it holds its shape.

    Prepare the Topping

    In a small bowl, mix together panko breadcrumbs, grated Parmesan cheese, and paprika.

    Sprinkle the breadcrumb mixture over the filled potato halves, and drizzle with olive oil.
