Prepare the Potato Bites

Preheat Oven
Preheat your oven to 425°F (220°C).

Wash and Cut Potatoes
Thoroughly wash the russet potatoes. Cut them into bite-sized cubes, ensuring they are uniform for even cooking.

Season Potatoes
In a large bowl, combine the potato cubes with olive oil, garlic powder, onion powder, paprika, salt, and black pepper. Toss well to ensure the potatoes are evenly coated.

Bake Potatoes
Spread the seasoned potatoes evenly on a baking sheet lined with parchment paper. Bake in the preheated oven for 25-30 minutes, or until golden brown and crispy, flipping halfway through the cooking time.

Add Cheese (Optional)
If using, sprinkle the Parmesan cheese over the potato bites during the last 5 minutes of baking for a cheesy finish.
Prepare the Dipping Sauce

Mix Dipping Sauce
In a small bowl, mix together the ketchup and mayonnaise. If desired, add sriracha for a spicy kick. Adjust the quantities to taste.
Serve

Serve Hot
Remove the potato bites from the oven and let them cool slightly. Serve warm with the dipping sauce on the side.
