For the Smoked BBQ Rib Tips

    Prepare the Rib Tips

    Preheat your smoker to 225°F (107°C) and prepare the pork rib tips by trimming any excess fat.

    Season the Rib Tips

    In a bowl, mix together the smoked paprika, garlic powder, onion powder, black pepper, and salt. Rub this mixture all over the rib tips. Drizzle with olive oil and massage it into the meat.

    Smoke the Rib Tips

    Place the rib tips in the smoker and smoke for 3 to 4 hours, or until the meat is tender and has reached an internal temperature of 190°F (88°C).

    Glaze with BBQ sauce

    During the last 30 minutes of smoking, brush the rib tips with the BBQ sauce and allow it to caramelize.

    Rest the Rib Tips

    Once done, remove the rib tips from the smoker and let them rest for 10 minutes before chopping into small pieces.

    Prepare the Potatoes

    Preheat the oven to 400°F (200°C). Wash the russet potatoes thoroughly and poke several holes in each potato with a fork.

    Bake the Potatoes

    Rub each potato with a little olive oil and sprinkle with salt. Place them directly on the oven rack and bake for 45-60 minutes, or until tender.

    Assemble the Loaded Potatoes

    Once the potatoes are done, remove them from the oven and let them cool slightly. Cut a slit in the top of each potato and fluff the insides with a fork.

    Add Toppings

    Add a tablespoon of butter to each potato, followed by a generous dollop of sour cream, shredded cheddar cheese, chopped green onions, and finally, top with the smoked BBQ rib tips.
