Prepare the Spud

    Preheat the Oven

    Preheat your oven to 425°F (220°C).

    Prepare Potatoes

    Wash and scrub the russet potatoes thoroughly. Pat them dry with a paper towel.

    Season Potatoes

    Rub each potato with olive oil, then sprinkle with salt and black pepper.

    Bake Potatoes

    Place the potatoes directly on the oven rack or on a baking sheet. Bake for 45-60 minutes, until they are fork-tender.

Prepare the Buffalo Chicken

    Cook Chicken

    In a large skillet over medium heat, add the chicken breasts. Cook for about 5-7 minutes on each side or until fully cooked. Remove from heat and shred the chicken.

    In the same skillet, add the shredded chicken, buffalo sauce, cream cheese, garlic powder, and onion powder. Stir well to combine and heat through until the cream cheese is melted and everything is well mixed.

    Chop the green onions and cut the celery sticks into small pieces.

    Once the potatoes are done baking, cut a slit down the middle of each potato. Fluff the insides with a fork.
