Cook the Fries
Preheat the vegetable oil in a deep fryer or a large pot to 180°C (350°F). Carefully add the frozen French fries in batches to avoid overcrowding. Fry for 4-5 minutes or until golden brown and crispy. Remove fries with a slotted spoon and place on paper towels to drain excess oil.

Make the Cheese Sauce
In a saucepan over medium heat, melt the butter. Once melted, whisk in the all-purpose flour and cook for about 1 minute, stirring constantly. Gradually add the milk, whisking to combine, until the mixture is smooth and thickened (about 3-5 minutes). Stir in the shredded cheddar cheese until melted and smooth. Season with salt and black pepper. Remove from heat.

Assemble the Bacon Cheese Fries
On a large serving platter or individual plates, layer the hot fries. Pour the cheddar cheese sauce generously over the fries, ensuring they are well coated. Sprinkle the crumbled bacon and chopped green onions over the top. Serve immediately while hot.
