Preparation of Baked Potatoes

Bake the Potatoes
Preheat the oven to 400°F (200°C). Wash the potatoes thoroughly and prick them with a fork several times. Rub them with a little olive oil and sprinkle with salt. Place them directly on the oven rack and bake for 45-60 minutes or until tender. Remove from the oven and let cool slightly.

Prepare the Potatoes
Once the baked potatoes are cool enough to handle, cut them in half lengthwise. Gently scoop out a bit of the flesh to create a small well for the filling.

Fill the Potatoes
In a mixing bowl, combine the smoked chicken, shredded mozzarella, and half of the Parmesan cheese. Mix well. Spoon the chicken and cheese mixture into the hollowed-out baked potatoes.

Add the Alfredo Sauce
Pour the warm Alfredo sauce evenly over each stuffed potato, ensuring each is generously covered.

Top with Cheese and Green Onions
Sprinkle the remaining Parmesan cheese over the top of each potato. Finely chop the green onions and sprinkle them over the potatoes for garnish.

Bake the Stuffed Potatoes
Place the stuffed potatoes in a baking dish and bake in the oven at 350°F (175°C) for 15-20 minutes, or until the cheese is melted and bubbly.
