    Prepare the Bundt Pan

    Preheat the oven to 350°F (175°C) and grease a Bundt pan with butter or non-stick spray.

    Mix Dry Ingredients

    In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and ground star anise.

    Cream Butter and Sugar

    In another bowl, cream the softened butter and granulated sugar until light and fluffy.

    Add Eggs and Persimmons

    Beat in the eggs one at a time, then mix in the mashed persimmons until combined.

    Combine Mixtures

    Gradually add the dry ingredients to the wet ingredients, alternating with the brewed Lapsang Souchong tea, mixing until just combined. Stir in the vanilla extract.

    Pour the batter into the prepared Bundt pan and smooth the top.

    Bake in the preheated oven for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
