Tart Preparation

Prepare the Pie Crust

Preheat the oven to 375°F (190°C). Roll out the pie crust and fit it into a tart pan. Prick the bottom with a fork and bake for 10 minutes until lightly golden.

Prepare the Filling

While the crust is baking, slice the Asian pears thinly. In a bowl, combine the sliced pears with honey, cinnamon, and a pinch of salt.

Assemble the Tart

Once the crust is done, remove it from the oven. Layer the sliced pears evenly in the crust. Crumble the Cowpoke Blue Cheese over the pears and sprinkle the black walnuts on top.

Bake the Tart

Dot the tart with butter and return it to the oven. Bake for an additional 25-30 minutes, or until the pears are tender and the cheese is melted.

Prepare the Endive Salad

While the tart is baking, wash the endive and slice it thinly. Toss it with a drizzle of olive oil and a pinch of salt.

Serve

Once the tart is finished baking, let it cool slightly. Serve warm with the endive salad on the side.
