Method
Prepare Glass
Chill the glass
Place a tall glass (12–16 fl oz capacity) in the freezer for 5–10 minutes or fill it with ice water while you prepare ingredients to keep the float cold. Empty the ice water right before assembly.
Assemble the Float
Scoop: Using an ice cream scoop, place 2 standard scoops of vanilla ice cream into the chilled glass. Reserve the third scoop to add after pouring the soda so foam stays tall and creamy.
Optional milk: If you want a creamier, richer float, drizzle 1 tablespoon cold whole milk over the scoops now.
Pour soda: Slowly pour 6–8 fl oz of root beer (or your chosen soda) down the inside of the glass at a slight angle to minimize immediate foaming. Fill until the foam crests near the rim but does not overflow. Stop and let foam settle if it rises too quickly, then pour the remaining soda (about 4–6 fl oz) to reach 12 fl oz total or your glass capacity.
Top: Gently add the reserved 1 scoop of ice cream on top of the foam so it sits slightly above the liquid, creating the classic float profile.
Finish & Serve
Garnish: Add 1–2 tablespoons of whipped cream on top if using, drizzle 1 teaspoon chocolate syrup if desired, and place a maraschino cherry on the peak.
Serve: Insert a wide straw and/or a long spoon. Serve immediately so the ice cream stays frothy and the contrast between cold ice cream and carbonated soda is at its best.
Notes: To make multiple floats, work in batches: scoop ice cream into glasses first, then pour soda just before serving to maintain foam. For variations, substitute ice cream flavors (chocolate, strawberry) and compatible sodas (cola, cream soda, orange soda).
