Prepare the Butternut Squash Sauce
Peel and cube the butternut squash, then steam until tender, about 15 minutes.

Blend the Sauce
In a blender, combine the steamed butternut squash, heavy cream, garlic (minced), salt, black pepper, and nutmeg. Blend until smooth and creamy. Adjust seasoning as needed.

Sear the Scallops
Pat the sea scallops dry with paper towels and season with salt and black pepper. In a large skillet, heat olive oil and 1 tablespoon of butter over medium-high heat until shimmering. Add the scallops and sear for about 2-3 minutes on each side until golden brown and cooked through.

Serve
On a plate, spoon the butternut squash sauce and arrange the seared scallops on top. Garnish with fresh parsley.
