Preparing the Potatoes
Wash and peel the Russet potatoes. Cut them into even strips, about 1/4 inch thick.

Soaking the Potatoes
Place the cut potatoes in a large bowl of cold water and soak for at least 30 minutes to remove excess starch. Drain and pat dry with paper towels.

Heating the Oil
In a large, heavy-bottomed pot, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure accurate temperature.

Frying the Potatoes
Carefully add a handful of the dried potato strips to the hot oil. Fry in batches for about 5-7 minutes or until they are golden brown and crispy. Remove and drain on paper towels.

Seasoning the Fries
While the fries are still hot, sprinkle with sea salt, garlic powder, paprika, and black pepper to taste. Toss to coat evenly.

Garnishing
Finely chop the fresh parsley and sprinkle over the fries before serving.
