Method

Prepare the Salmon

    Marinate the Salmon

    In a bowl, combine olive oil, salt, and black pepper. Place the salmon fillets in the bowl and coat them evenly with the marinade. Let it sit for at least 15 minutes.

    Preheat your grill to medium-high heat. If using a wood grill, ensure the wood is properly soaked and ready for grilling.

Prepare the Vegetables

    Roast the Vegetables

    On a baking sheet, toss the cherry tomatoes, asparagus, long stem artichokes, and balsamic onions with olive oil, salt, and pepper. Roast in the oven at 400°F (200°C) for about 20-25 minutes until they are tender and slightly caramelized.

Prepare the Dressing
