Marinade Preparation

    Combine Ingredients

    In a medium bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper until well combined.

    Marinate Chicken

    Place the chicken breasts in a large resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring all pieces are well coated. Seal the bag or cover the dish, then refrigerate for at least 1 hour, or preferably overnight for maximum flavor.

Grilling

    Prepare Wood Chips

    Soak the hickory wood chips in water for at least 30 minutes before grilling to prevent them from burning too quickly.

    Preheat Grill

    Preheat your grill to medium-high heat (approximately 375°F to 400°F). If using a charcoal grill, prepare a two-zone fire for direct and indirect grilling.

    Grill Chicken

    Remove the chicken from the marinade and discard any remaining marinade. Place the chicken breasts on the grill over direct heat. Grill for about 6-8 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken has nice grill marks.

    Add Wood Chips

    During the last few minutes of grilling, place the soaked wood chips directly onto the coals or in a smoker box on a gas grill to infuse the chicken with a smoky flavor.

    Once cooked, remove the chicken from the grill and let it rest for 5 minutes before slicing. This helps to retain the juices.
