    Preheat your grill to medium-high heat. In a bowl, mix the olive oil, minced garlic, chopped rosemary, chopped thyme, salt, and black pepper to create a marinade. Rub this mixture all over the rack of lamb, ensuring it is well coated. Let it marinate for at least 30 minutes at room temperature.

    Place the marinated rack of lamb on the grill bone side down. Grill for about 5-7 minutes until the bottom is seared, then turn it over so the meat side is down. Grill for another 5-7 minutes for medium-rare. Use a meat thermometer to check the internal temperature, which should read 130°F (54°C).
