Prepare the Vegetables
Wash and chop all the vegetables as specified. Make sure they are cut into bite-sized pieces for even cooking.

Make the Sauce
In a small bowl, whisk together soy sauce, sesame oil, minced garlic, grated ginger, cornstarch, and water. Mix until the cornstarch is fully dissolved.

Heat the Pan
In a large skillet or wok, heat a tablespoon of vegetable oil over medium-high heat until shimmering.

Stir-Fry the Vegetables
Add broccoli, carrot, red bell pepper, snow peas, and zucchini to the pan. Stir-fry the vegetables for about 5-7 minutes, or until they are tender-crisp.

Add the Sauce
Pour the prepared sauce over the vegetables in the skillet. Stir well to coat all the vegetables and continue to stir-fry for another 2-3 minutes until the sauce thickens and the vegetables are well coated.

Garnish and Serve
Remove from heat and sprinkle with chopped green onions. Serve hot over cooked rice or noodles, if desired.
