Grilled Tuna Loin

Marinate the Tuna
In a small bowl, combine olive oil, chopped rosemary, chopped thyme, minced garlic, salt, and black pepper. Rub this mixture all over the tuna loin and let it marinate at room temperature for 30 minutes.

Penne and Tuscan White Beans

Cook the Penne
In a large pot of boiling salted water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

Prepare the White Beans
In a large skillet over medium heat, add the canned Tuscan white beans (drained and rinsed) and cook for about 3-4 minutes. Add the baby spinach and cook until wilted.

Plate the Dish
Divide the penne and Tuscan white bean mixture among serving plates. Top each plate with slices of grilled tuna loin. Serve immediately.
