Method
Duck Preparation
- 1
- 2
Roast the Duck
Roast the duck in the preheated oven for about 1.5 to 2 hours, or until the internal temperature reaches 165°F (74°C). Baste the duck with pan juices every 30 minutes for a crispy skin.
Balsamic Orange Marmalade
- 3
Prepare the Marmalade
In a small saucepan, combine balsamic vinegar, orange marmalade, fresh orange zest, and orange juice. Bring to a simmer over medium heat, stirring frequently. Cook for about 10-15 minutes until the mixture thickens slightly. Remove from heat and set aside.
Spezia Mashed Potatoes
- 4
- 5
Mash the Potatoes
Add butter, heavy cream, garlic powder, salt, and pepper to the potatoes. Mash until smooth and creamy. Adjust seasoning to taste.
Fresh Asparagus
- 6
Prepare the Asparagus
While the duck is roasting, rinse the asparagus and trim the woody ends. Toss the asparagus with olive oil, salt, and black pepper.
- 7
Roast the Asparagus
In the last 15 minutes of the duck's cooking time, place the asparagus on a baking sheet and roast in the oven alongside the duck until tender and slightly charred.
