Preparation for the Steak and Shrimp

    Season the Steak

    Rub the top sirloin steaks with olive oil, garlic powder, paprika, salt, and black pepper. Make sure to coat both sides evenly. Let the steaks marinate for at least 30 minutes.

    Prepare the Shrimp

    In a bowl, toss the jumbo shrimp with olive oil, salt, and black pepper. Let them sit while you prepare the Béarnaise sauce.

Making the Béarnaise Sauce

    Create the Reduction

    In a small saucepan, combine the finely chopped shallots, white wine vinegar, dry white wine, and fresh tarragon. Simmer over medium heat until the liquid is reduced to about 2 tablespoons. Set aside to cool slightly.

    Melt the Butter

    In another saucepan, melt the unsalted butter over low heat. Do not let it brown. Once melted, remove from heat and let it cool slightly.

    Whisk the Egg Yolks

    In a heatproof bowl, whisk the egg yolks together with the cooled reduction. Place the bowl over a pot of simmering water (double boiler) and whisk continuously until the mixture thickens.

    Incorporate the Butter

    Slowly drizzle the melted butter into the egg yolk mixture while whisking constantly to create an emulsion. Season with salt and black pepper to taste. Keep warm.

Cooking the Steak and Shrimp

    Cook the Steak

    Preheat a grill or skillet over medium-high heat. Cook the marinated steaks for about 4-5 minutes on each side for medium-rare, or until desired doneness is achieved. Remove from heat and let rest for 5 minutes before slicing.

    Cook the Shrimp

    In the same skillet or on the grill, cook the seasoned shrimp for about 2-3 minutes on each side, or until they turn pink and opaque. Remove from heat.

    Serve

    Slice the rested steak and serve with the grilled shrimp on the side. Drizzle the Béarnaise sauce over the steak and shrimp before serving.
