Prepare the Pasta

    Cook the Spaghetti

    In a large pot of boiling salted water, cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti.

Make the Sauce

    Prepare the Pancetta

    In a large skillet over medium heat, add the pancetta or guanciale. Cook until crispy and golden, about 5-7 minutes. Remove from heat and set aside.

    Mix the Sauce Ingredients

    In a bowl, whisk together the eggs, grated Parmesan cheese, and a generous amount of black pepper until well combined.

Combine and Serve

    Combine the Pasta with the Sauce

    Add the drained spaghetti to the skillet with pancetta. Pour the egg and cheese mixture over the pasta, quickly tossing everything together. If the sauce is too thick, add reserved pasta water a little at a time until the desired consistency is reached.

    Plate the carbonara and garnish with additional Parmesan cheese, freshly cracked black pepper, and chopped parsley if desired. Serve immediately.
