Prepare the Pasta

Cook the Spaghetti
In a large pot of boiling salted water, cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti.
Make the Sauce

Prepare the Pancetta
In a large skillet over medium heat, add the pancetta or guanciale. Cook until crispy and golden, about 5-7 minutes. Remove from heat and set aside.

Mix the Sauce Ingredients
In a bowl, whisk together the eggs, grated Parmesan cheese, and a generous amount of black pepper until well combined.
Combine and Serve

Serve
Plate the carbonara and garnish with additional Parmesan cheese, freshly cracked black pepper, and chopped parsley if desired. Serve immediately.
