Pasta Preparation

    Cook Capellini

    In a large pot, bring salted water to a boil. Add the capellini pasta and cook according to package instructions until al dente, usually about 3-4 minutes. Drain and set aside, reserving 1/2 cup of pasta water.

Broccolini Preparation

    Blanch Broccolini

    In the same pot of boiling water, add the broccolini and blanch for about 2-3 minutes until bright green and tender. Remove and place in ice water to stop the cooking process. Drain and set aside.

Shrimp and Sauce Preparation

    Sauté Shrimp

    In a large skillet over medium heat, melt the butter and olive oil. Add the minced garlic and sauté until fragrant, about 1 minute. Add the shrimp, red pepper flakes, salt, and black pepper. Cook until the shrimp are pink and opaque, around 3-5 minutes.

    Create Sauce

    Pour in the dry white wine and bring the mixture to a simmer. Allow it to reduce for about 2-3 minutes, stirring occasionally.

    Combine Ingredients

    Add the cooked capellini and blanched broccolini to the skillet. Toss everything together, adding reserved pasta water as needed to create a light sauce. Stir in the chopped Italian parsley right before serving.

Serving

    Plate the Dish

    Divide the shrimp scampi capellini among serving plates. Garnish with additional Italian parsley if desired. Serve immediately.
