For the Sesame Fried Walleye

Prepare the Walleye
Pat the walleye fillets dry with paper towels. Season both sides with salt and black pepper.

Set Up Breading Station
In one bowl, place the all-purpose flour. In a second bowl, beat the eggs. In a third bowl, place the sesame seeds.

Bread the Fillets
Dip each walleye fillet into the flour, then into the beaten eggs, and finally coat with sesame seeds, pressing gently to adhere.

Fry the Fillets
Heat vegetable oil in a large skillet over medium-high heat. Once hot, carefully add the breaded fillets and fry for 3-4 minutes on each side or until golden brown and cooked through. Remove from the skillet and drain on paper towels.
For the Chili Marmalade

Combine Ingredients
In a medium saucepan, combine chili flakes, sugar, rice vinegar, water, and minced garlic.

Cook the Marmalade
Bring the mixture to a boil over medium heat, then reduce to a simmer. Cook for about 15-20 minutes, stirring occasionally, until the mixture thickens slightly. Remove from heat and let cool.

Mash the Potatoes
Drain the potatoes and return them to the pot. Add butter, heavy cream, garlic powder, salt, and black pepper. Mash until smooth and creamy.
For the Roasted Vegetables

Prepare Vegetables
Preheat your oven to 425°F (220°C). In a large mixing bowl, toss the sliced bell peppers, zucchini, and red onion with olive oil, salt, and black pepper.

Roast the Vegetables
Spread the vegetables out on a baking sheet in a single layer. Roast in the preheated oven for 20-25 minutes, stirring halfway through, until they are tender and slightly caramelized.
