Cut the Cheese
Slice the provolone cheese into sticks, approximately 1/2 inch thick and 3 inches long.

Bread the Cheese Sticks
Take each cheese stick and first coat it in the flour mixture, shaking off any excess, then dip it into the beaten eggs, and finally roll it in the breadcrumbs until completely coated.

Heat the Oil
In a large frying pan, heat the vegetable oil over medium-high heat until hot (about 350°F or 175°C).

Fry the Cheese Sticks
Carefully place the breaded cheese sticks in the hot oil, making sure not to overcrowd the pan. Fry for 2-3 minutes on each side, or until golden brown and crispy.
