Cooking Pasta

    Boil Water

    In a large pot, bring water to a rolling boil. Add 1 tablespoon of salt to the water.

    Cook Pasta

    Add the pasta to the boiling water and cook according to package instructions until al dente. Once cooked, reserve ½ cup of pasta water, then drain the pasta and set aside.

Cooking Vegetables

    Sauté Vegetables

    In a large skillet, heat 3 tablespoons of olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

    Add Vegetables

    Add the diced bell peppers, zucchini, cherry tomatoes, julienned carrots, and broccoli florets to the skillet. Sauté the vegetables for 5-7 minutes until they are tender but still crisp.

Combining Ingredients

    Mix Pasta and Sauce

    Add the cooked pasta to the skillet with the sautéed vegetables. Pour in the lemon juice, reserved pasta water, grated Parmesan cheese, black pepper, and red pepper flakes. Toss everything together until well combined and heated through.

    Serve

    Remove from heat and serve immediately. Optionally, garnish with additional Parmesan cheese and fresh herbs if desired.
