Preparing the Salad

    Wash and Chop the Vegetables

    Thoroughly wash the mixed greens, Roma tomatoes, cucumber, and red onion under cold water. Chop the Roma tomatoes into bite-sized pieces, slice the cucumber into rounds, and thinly slice the red onion.

    Combine Salad Ingredients

    In a large salad bowl, combine the mixed greens, chopped Roma tomatoes, sliced cucumber, sliced red onion, Kalamata olives, and pepperoncini peppers. Toss gently to mix.

Making the Dressing

    In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, Dijon mustard, minced garlic clove, dried oregano, salt, and black pepper until well blended.
