Mushrooms

Method

Preparation

  1. 1

    Clean the Mushrooms

Using a damp paper towel, gently clean the Portobello mushrooms to remove any dirt. Remove the stems and scrape out the gills with a spoon if desired for a cleaner look.

  2. 2

    Prepare the Marinade

In a bowl, whisk together olive oil, balsamic vinegar, minced garlic, dried oregano, chopped rosemary, salt, and black pepper until well combined.

  3. 3

    Marinate the Mushrooms

Place the cleaned Portobello mushrooms in a shallow dish and pour the marinade over them. Ensure each mushroom is well coated. Cover and let marinate for at least 30 minutes.

Cooking

  1. 4

    Grill the Mushrooms

Preheat your grill or grill pan over medium heat. Once hot, place the marinated Portobello mushrooms on the grill and cook for about 5-7 minutes on each side, or until tender and grill marks appear.

  2. 5

    Prepare the Toppings

While the mushrooms are grilling, prepare the toppings by crumbling feta cheese and halving the cherry tomatoes. Chop the fresh basil leaves.

  3. 6

    Assemble the Dish

Once the mushrooms are cooked, remove them from the grill and place them on a serving platter. Top each mushroom with crumbled feta cheese, halved cherry tomatoes, and fresh basil.
