Prepare Wafer Layers

Make the Wafer Batter
In a large mixing bowl, cream together the unsalted butter and sugar until light and fluffy. Beat in the eggs, one at a time, mixing well after each addition. Combine the flour and baking powder in a separate bowl, then gradually add to the butter mixture until fully incorporated.

Bake the Wafer Layers
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper. Spread a thin layer of the batter onto the prepared baking sheet, ensuring it’s evenly spread. Bake for 10-12 minutes, or until lightly golden. Remove the wafer and let it cool completely. Repeat this process until all the batter is used.
Prepare Vanilla Cream Filling

Whip the Cream
In a chilled mixing bowl, pour in the heavy cream. Using an electric mixer, beat the cream until it begins to thicken. Gradually add the powdered sugar and vanilla extract, and continue beating until stiff peaks form. Set aside.

In a small bowl, mix the apricot jam with the sliced fresh apricots. This will enhance the flavor and create a smoother filling.
Assemble the Torte

Layer the Torte
Take one wafer layer and spread a generous amount of the vanilla cream filling over it. Add a layer of the apricot filling on top of the cream. Repeat the process, alternating between vanilla cream and apricot filling, until all layers are stacked. Finish with a layer of vanilla cream on top.

Chill and Serve
Cover the assembled torte with plastic wrap and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld and the layers to set. Slice and serve cold.
