    Wash the lemons thoroughly to remove any wax or pesticides. Pat them dry with a clean towel.

    Using a vegetable peeler or zester, carefully remove the zest from each lemon, making sure to avoid the bitter white pith. Place the zest into a large glass jar.

    Pour the vodka over the lemon zest in the jar, ensuring that all the zest is submerged. Seal the jar tightly and let it sit in a cool, dark place for about 1 to 2 weeks, shaking it gently every few days.
