Prepare the Steak
Season the top sirloin steaks with salt, black pepper, minced garlic, and chopped rosemary. Let them sit at room temperature for 30 minutes before cooking.

Add Wine and Broth
Pour in the red wine and let it simmer for 2-3 minutes, scraping the browned bits from the bottom. Then add beef broth and thyme, and simmer for another 10 minutes until slightly thickened.
For the Spezia Mashed Potatoes

Mash the Potatoes
Drain the potatoes and return them to the pot. Add butter, heavy cream, garlic powder, salt, and black pepper. Mash until smooth and creamy.
