Cooking Gnocchi

Boil the Gnocchi
Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions or until they float to the surface, about 2-3 minutes. Drain and set aside.
Preparing Chicken and Vegetables

Sear the Chicken
In a large skillet, heat olive oil over medium-high heat. Season the chicken breasts with salt and black pepper. Add the chicken to the skillet and cook for about 6-7 minutes on each side, or until fully cooked and golden brown. Remove the chicken from the skillet and let it rest.

Making the Gorgonzola Cream Sauce

Prepare the Sauce
In a saucepan, heat the heavy cream over medium heat. Once warmed, add the gorgonzola cheese and Parmesan cheese, stirring until melted and smooth. Add nutmeg and mix well. Simmer for a few minutes until slightly thickened.
Assembling the Dish

Combine and Serve
Slice the seared chicken into strips. In a large serving bowl, combine the drained gnocchi, sautéed mushrooms and spinach, and the gorgonzola cream sauce. Toss gently to combine. Top with sliced chicken and serve immediately.
