Prepare the Filling

    In a medium bowl, combine ricotta cheese, grated Parmesan, chopped spinach, minced garlic, salt, and black pepper. Mix thoroughly until well combined. Set aside.

Make the Dough

    In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and add the eggs and olive oil. Mix until the dough begins to come together.

    Transfer the dough to a floured surface and knead for about 5-7 minutes until it is smooth and elastic. Wrap the dough in plastic wrap and let it rest for 30 minutes.

Assemble the Ravioli

    After resting, divide the dough into quarters. Roll out one quarter at a time on a floured surface until it is thin (about 1/16 inch thick).
