Method

Preparing the Pork Chops

    Season the Pork Chops

    Pat the double bone in pork chops dry with paper towels. Rub the game spice blend, salt, and black pepper all over the chops. Let them sit at room temperature for about 30 minutes to absorb the flavors.

    Grill the Pork Chops

    Preheat your grill to medium-high heat. Place the pork chops on the grill and cook for about 5-7 minutes per side, or until they reach an internal temperature of 145°F. Remove from the grill and let rest for 5 minutes before serving.

Making the Burgundy Au Jus

    Sauté Shallots

    In a saucepan, melt the butter over medium heat. Add the finely chopped shallots and sauté until translucent, about 3-4 minutes.

    Add Wine and Broth

    Pour in the Burgundy wine and beef broth. Bring to a simmer and reduce the heat. Let it simmer for about 15-20 minutes until it thickens slightly.

Cooking the Mushrooms

    Sauté the Mushrooms

    In a skillet, heat olive oil over medium heat. Add the sliced cremini mushrooms and cook until they are browned, about 5-7 minutes. Stir in minced garlic and season with salt and pepper, cooking for an additional 2 minutes.

Sautéing the Spinach

    Cook the Spinach

    In the same skillet used for the mushrooms, add olive oil and minced garlic over medium heat. Once sizzling, add fresh spinach in batches, stirring until wilted. Season with salt and pepper to taste.

Making the Spezia Mashed Potatoes

    Boil the Potatoes

    Place peeled and cubed potatoes in a large pot and cover with water. Bring to a boil and cook until fork-tender, about 15-20 minutes. Drain the potatoes.

    Mash the Potatoes

    Return the drained potatoes to the pot. Add butter, cream or milk, and Spezia seasoning. Mash until smooth and creamy. Adjust seasoning to taste.
