Dijon Crusted Salmon

Prepare the Salmon
Preheat your oven to 400°F (200°C). Place the salmon fillets on a baking sheet lined with parchment paper.

Make the Dijon Mixture
In a small bowl, combine Dijon mustard, olive oil, salt, and black pepper. Mix well.

Coat the Salmon
Spread the Dijon mixture evenly over the top of each salmon fillet.

Add the Panko Topping
In another bowl, mix together panko breadcrumbs and chopped parsley. Press this mixture onto the mustard-coated salmon fillets.

Bake the Salmon
Bake the salmon in the preheated oven for 12-15 minutes, or until the salmon is cooked through and the crust is golden brown.

Add Cream and Butter
Add butter, heavy cream, minced garlic, salt, and black pepper to the mashed potatoes. Stir until creamy and well combined.
Porcini Sauce

Prepare the Mushrooms
Soak the dried porcini mushrooms in warm water for about 20 minutes, then drain and chop.

Make the Sauce
Add the chopped porcini mushrooms and vegetable broth to the saucepan. Simmer for about 10 minutes until the sauce thickens. Season with salt and black pepper.
