Prepare the Shrimp

Clean the Shrimp
Peel and devein the shrimp, leaving the tails on for presentation. Rinse them under cold water and pat dry with paper towels.

Season the Shrimp
In a bowl, season the shrimp with salt and black pepper. Set aside to marinate for about 10 minutes.
Prepare the Breading

In one shallow bowl, place the flour. In a second bowl, beat the egg. In a third bowl, combine the coconut flakes and panko breadcrumbs.

Bread the Shrimp
Dredge each shrimp in the flour, then dip into the egg, allowing the excess to drip off. Finally, coat the shrimp in the coconut and panko mixture, pressing lightly to adhere.
Make the Chili Marmalade

In a small saucepan, mix together the chili sauce, honey, rice vinegar, and red chili flakes.

Heat the Mixture
Place the saucepan over medium heat and bring the mixture to a simmer, stirring occasionally, until well combined and warmed through, about 5 minutes.

Fry the Shrimp
Working in batches, carefully add the breaded shrimp to the hot oil. Fry for 2-3 minutes on each side, or until golden brown and cooked through. Remove with a slotted spoon and drain on paper towels.
Serve

Plate the Dish
Arrange the fried coconut shrimp on a serving platter and drizzle with the warm chili marmalade or serve it on the side for dipping.
