Prepare the Chicken
Pound the chicken breasts to an even thickness using a meat mallet. Season with salt and pepper.

Breading Process
Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs. Dredge each chicken breast in flour, dip in egg, and coat with breadcrumbs.

Cook the Chicken
In a large skillet, heat olive oil over medium heat. Add the breaded chicken breasts and cook for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and keep warm.

In a bowl, mix roasted red peppers, diced tomatoes, chopped basil, minced garlic, balsamic vinegar, salt, and black pepper. Stir to combine.
