Chicken Preparation

Season the Chicken
Season the chicken breasts with salt and black pepper on both sides.

Coat the Chicken
Dip each chicken breast into flour, then into the beaten eggs, and finally coat with the bread crumb and Parmesan mixture.

Fry the Chicken
In a large skillet, heat olive oil over medium heat. Add the breaded chicken and cook for 4-5 minutes on each side until golden brown. Remove and set aside.

Add Tomatoes and Seasoning
Add canned crushed tomatoes, dried oregano, salt, and black pepper. Let simmer for about 15 minutes.

Add Fresh Basil
Stir in the chopped fresh basil and let simmer for an additional 5 minutes.
Assembly and Cooking

Preheat Oven
Preheat your oven to 375°F (190°C).

Layer Chicken and Sauce
In a baking dish, spread half of the tomato sauce. Place the fried chicken breasts on top and cover with the remaining sauce.

Add Mozzarella
Top with sliced fresh mozzarella cheese.

Bake in the preheated oven for 25-30 minutes, until the cheese is melted and bubbly.

In a large pot, bring salted water to a boil.

Cook Pasta
Add capellini pasta and cook according to package instructions, typically about 4-5 minutes. Drain and set aside.
Serving

Plate the Dish
On serving plates, place a portion of capellini pasta, then add a piece of chicken with sauce on top.
