Preparation of Grappa

Step 1: Prepare the Grape Pomace
Collect the grape pomace, which includes the skins, seeds, and stems left over from winemaking. Ensure it is fresh and free from any mold.

Step 2: Combine Ingredients
In a large fermentation vessel, combine the grape pomace with 2 liters of water. This mixture will help extract the flavors during the fermentation process.

Allow the mixture to ferment at room temperature for approximately 5 to 7 days. Stir it daily to ensure even fermentation. You will know it's ready when the bubbling has slowed down significantly.

Transfer the fermented mixture into a distillation apparatus. Heat the mixture slowly to around 78°C (172°F). Collect the distillate from the condenser, which will be your base grappa.

Step 5: Optional Flavoring
If desired, add juniper berries, orange peel, and vanilla beans to the distillate. Let it steep for an additional week to infuse the flavors.

After the infusion period, filter the grappa through a fine mesh or cheesecloth to remove any solids. Bottle the grappa in clean, dry bottles and seal tightly.

For a smoother flavor, you can age the grappa in oak barrels for several months. However, this step is optional.
