Method
Cook the Pork Ribs

Prepare the Marinade
In a large bowl, combine brown sugar, fish sauce, soy sauce, minced garlic, minced ginger, and black pepper. Mix well until sugar is dissolved.

Marinate the Ribs
Add the pork ribs to the bowl, ensuring they're well coated with the marinade. Cover and refrigerate for at least 2 hours, preferably overnight.

Cook the Ribs
In a large pot, add the marinated ribs along with the marinade and water. Bring to a boil, then reduce heat to low and simmer for about 1.5 hours, or until the ribs are tender.

Caramelize the Ribs
Increase the heat to medium-high and let the sauce reduce until it becomes thick and caramelized, coating the ribs nicely.
Serve and Garnish

Prepare the Garnish
While the ribs are cooking, chop the fresh cilantro and mint leaves. Slice the red chili and prepare lime wedges.

Serve
Once the ribs are caramelized, transfer them to a serving plate. Top with crushed peanuts, fried shallots, fresh herbs, and sliced red chili. Serve with lime wedges on the side.
