Prepare the Pears

Peel and core the pears, then slice them into quarters.

Cook the Pears

In a saucepan, combine sugar, water, and chai spice blend. Bring to a simmer until the sugar dissolves. Add the pears and lemon juice, cooking until tender, about 10-15 minutes.

Cool

Remove from heat and let the pears cool in the syrup.

Heat Milk and Cream

In a saucepan, combine milk and cream. Heat on medium until just below boiling.

Whisk Egg Yolks

In a bowl, whisk together egg yolks and sugar until pale and creamy.

Combine Mixtures

Slowly pour the hot milk mixture into the egg yolks while whisking constantly. Return to the saucepan.

Thicken Custard

Cook on low heat until the mixture thickens, about 8-10 minutes. Stir in vanilla extract.

Strain and Cool

Strain through a fine mesh sieve and cool in the refrigerator.

Brown the Butter

In a saucepan, melt the butter over medium heat until it turns golden brown and has a nutty aroma.

Mix Ingredients

In a bowl, combine brown butter, sugar, and salt. Mix well, then add flour and toasted sesame seeds. Combine until a dough forms.

Chill the Dough

Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

Preheat the oven to 350°F (175°C). Roll out the dough and cut into desired shapes. Bake for 12-15 minutes until golden.
