Method
Lamb Bolognese Preparation
Cook the Lamb
In a large skillet, heat olive oil over medium heat. Add diced onion, garlic, carrot, and celery. Sauté until vegetables are tender. Add ground lamb and cook until browned.
Add Tomatoes
Stir in tomato paste, crushed tomatoes, red wine, oregano, salt, and pepper. Simmer for 30 minutes, stirring occasionally.
Miso Bechamel Preparation
Add Milk
Slowly whisk in milk, ensuring no lumps form. Cook until the mixture thickens, about 5-7 minutes. Stir in miso paste, nutmeg, and salt.
Assembly and Baking
Layer the Lasagna
Preheat your oven to 180°C (350°F). In a baking dish, spread a layer of Lamb Bolognese, followed by a layer of lasagna noodles, then a layer of Miso Bechamel. Repeat the layers until all ingredients are used, finishing with Miso Bechamel on top.
Add Toppings
Sprinkle Furikake and grated Parmesan cheese on top. Cover with aluminum foil.
Bake
Bake in the preheated oven for 25 minutes, then remove the foil and bake for an additional 15 minutes until golden and bubbly.
Serve
Allow to cool slightly before slicing and serving.
