Beef Tartare Preparation

Prepare the Beef
Finely dice the grass-fed beef tenderloin and place it in a bowl.

Mix Ingredients
Add the capers, shallot, Dijon mustard, Worcestershire sauce, and parsley to the bowl. Season with salt and black pepper. Mix gently until combined.
Confit Egg Yolk

Prepare Confit Egg Yolks
In a small saucepan, gently heat the olive oil over low heat. Add the egg yolks and let them cook for about 30 minutes until they become tender but not fully cooked. Remove and let cool.

Serve
On a plate, arrange the beef tartare, top with the confit egg yolk, and serve with grilled ciabatta on the side.
