    Make the Pasta Dough

    In a mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the eggs. Gradually mix the flour into the eggs until a dough forms. Knead the dough on a floured surface for about 10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for 30 minutes.

    Prepare the Filling

    In a skillet, add olive oil and sauté charred onions, ramps, and garlic flowers until soft. Remove from heat and let cool. In a bowl, mix the cooled vegetables with calamansi juice and miso paste until well combined.

Assembly

    Assemble the Cappelletti

    Roll out the pasta dough into thin sheets. Cut into circles using a round cutter. Place a small spoonful of the filling in the center of each circle. Fold the dough over to create a half-moon shape and pinch the edges to seal. Bring the two ends together to form a cappelletti shape.

Cooking

    Cook the Cappelletti

    Bring a large pot of salted water to a boil. Gently add the cappelletti and cook until they float to the surface, about 3-5 minutes. Remove with a slotted spoon and drain.

    Prepare the Sauce

    In a pan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Season with salt and pepper. Toss the cooked cappelletti in the sauce.
