Peanut Butter Gelato

Make the Gelato Base
In a saucepan, combine the whole milk, heavy cream, sugar, and salt. Heat over medium heat until the sugar dissolves. Remove from heat.

Whisk Egg Yolks
In a bowl, whisk together the egg yolks and peanut butter until smooth. Slowly pour the warm milk mixture into the egg yolk mixture, whisking constantly.

Cook the Mixture
Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens enough to coat the back of a spoon. Let cool, then chill in the refrigerator for at least 4 hours.

Churn the Gelato
Churn the cooled mixture in an ice cream maker according to the manufacturer’s instructions. Freeze until firm.
Miso Caramel

Add Miso
Remove from heat and whisk in the butter, miso paste, and heavy cream until smooth. Let cool.
Black Sesame Chocolate

Melt the Chocolate
Melt the dark chocolate in a double boiler or microwave until smooth.

Combine with Sesame Paste
Stir in the black sesame paste until well combined. Let cool slightly.
Caramelized Bananas

Cook the Bananas
In a skillet, melt the butter over medium heat. Add the bananas and brown sugar, cooking until the bananas are caramelized on both sides.
Assembly

Serve the Dessert
Scoop the peanut butter gelato into bowls, top with caramelized bananas, drizzle with miso caramel and black sesame chocolate. Sprinkle with chopped peanuts before serving.
