Sourdough Bread

Mix Ingredients
In a large mixing bowl, combine the ancient grains, all-purpose flour, and salt. Mix well.

Add Water and Starter
Add the water and sourdough starter to the dry ingredients. Mix until a shaggy dough forms.

Knead the Dough
Turn the dough onto a floured surface and knead for about 10 minutes until smooth.

Bulk Fermentation
Place the dough in a lightly greased bowl, cover, and let it rise at room temperature for 4-6 hours or until doubled in size.

Shape and Second Rise
Shape the dough into a round loaf and place it in a proofing basket. Let it rise for another 1-2 hours.

Preheat Oven
Preheat your oven to 450°F (230°C) and place a Dutch oven inside to heat up.

Bake the Bread
Carefully transfer the dough to the hot Dutch oven, cover it, and bake for 30 minutes. Then remove the lid and bake for another 15-20 minutes until golden brown.

Cool the Bread
Remove the bread from the oven and let it cool on a wire rack.

Transfer the scallion butter to a piece of parchment paper, roll it into a log, and refrigerate until firm.
Dashi Salt

In a small bowl, mix the dashi powder and sea salt until well combined.
