Vanilla Mousse

    Prepare the gelatin

    In a small bowl, sprinkle the gelatin powder over the water and let it bloom for about 5 minutes.

    Whip the cream

    In a large mixing bowl, whip the heavy cream until soft peaks form. Gradually add the granulated sugar and continue to whip until stiff peaks form.

    Add vanilla

    Gently fold in the vanilla extract into the whipped cream.

    Melt the gelatin

    In a microwave or over a double boiler, melt the bloomed gelatin until completely dissolved. Allow it to cool slightly before adding it to the whipped cream.

    Combine

    Gently fold the melted gelatin into the whipped cream mixture until well combined. Refrigerate until set, about 1-2 hours.

Strawberry Compote

    Prepare the strawberries

    Wash and hull the fresh strawberries, then chop them into quarters.

    Cook the compote

    In a saucepan, combine the chopped strawberries, granulated sugar, and lemon juice. Cook over medium heat, stirring gently, until the strawberries break down and the mixture thickens slightly, about 10-15 minutes.

    Cool

    Remove from heat and allow the strawberry compote to cool completely before using.

Strawberry Crumbs

    Prepare the crumbs

    In a mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until the crumbs are evenly coated.

    Bake

    Spread the crumb mixture on a baking sheet lined with parchment paper. Bake in a preheated oven at 350°F (175°C) for about 8-10 minutes until golden and fragrant. Allow to cool.
